PRE-TRIP PREP: Freeze cod in portioned bags. Cook rice, cool, and freeze.
ON THE RIVER: Season thawed cod with taco seasoning. Heat olive oil in a skillet over medium-high heat; cook cod 3–4 minutes per side until it flakes easily. Break into chunks. Warm tortillas in a dry skillet. Warm rice and beans. Build tacos: tortilla, cabbage, cod, avocado, tomato, sour cream, cheese, salsa, and lime juice.
