Recipe Instructions

PRE-TRIP PREP: Mix taco seasoning with beans, corn, and diced tomatoes at home; store in sealed container in cooler.

ON THE RIVER: No cooking required. Mash avocados with lime juice and a pinch of salt. Lay tortillas flat. Layer bean mixture, cheese, sour cream, salsa, guacamole, and cilantro. Roll up and serve.
