Recipe Instructions
PRE-TRIP PREP: Slice bell peppers; store in sealed container in cooler. Slice cucumber and store similarly.
ON THE RIVER: No cooking required. Spread hummus generously on each tortilla. Layer spinach, bell peppers, cucumber, carrots, avocado, red onion, and feta. Drizzle with balsamic vinegar, sprinkle oregano. Roll tightly and slice in half diagonally.
