PRE-TRIP PREP: Freeze ham in portioned bags.

ON THE RIVER: Melt butter in a large skillet over medium heat. Sauté onion, bell pepper, and mushrooms 4–5 minutes. Add spinach; stir until wilted. Add thawed ham. Crack in eggs and scramble everything together. Cook until eggs are set. Top with shredded cheese until melted. Serve in warm tortillas with salsa and sliced avocado.
