PRE-TRIP PREP: None. Use avocados that are ripe but not overripe on the first days of the trip.
ON THE RIVER: Toast bread slices on a camp stove griddle with a drizzle of olive oil until golden. Mash avocado with lemon juice, salt, and red pepper flakes. Fry eggs in a pan to your preference. Spread avocado on toast, top with egg, diced tomato, and everything bagel seasoning.
