Recipe Instructions

PRE-TRIP PREP: Freeze chorizo before departure.

ON THE RIVER: Cook thawed chorizo in a large skillet, breaking it up as it browns. Drain excess fat. Crack eggs in and scramble together with chorizo until cooked through. Season with salt. Warm refried beans in a separate small pan or foil packet. Warm tortillas directly over stove flame (30 seconds per side). Serve chorizo-egg scramble in tortillas topped with shredded cheese, salsa verde, and sliced avocado with refried beans on the side.
