Recipe Instructions

PRE-TRIP PREP: Dice potatoes and parboil for 8 minutes at home; cool and freeze in bags. Cook and freeze sausage patties.

ON THE RIVER: Heat olive oil in a large skillet over medium-high heat. Add thawed potatoes, onion, and bell pepper. Cook undisturbed 5 minutes to get a crispy bottom, then stir and cook another 5–7 minutes until golden. Season with garlic powder, paprika, salt, and pepper. In a separate pan, heat sausage patties through. Push homefries to the side and scramble or fry eggs in the same pan. Serve with hot sauce.
