Recipe Instructions

PRE-TRIP PREP: None required. Keep eggs in secure container in cooler.

ON THE RIVER: Melt butter in a large skillet over medium heat. Fry eggs sunny-side up or over-easy. In the same pan, warm Canadian bacon slices 1–2 minutes per side. Split and toast English muffins on a dry skillet or directly over flame. Stack: muffin bottom, Canadian bacon, egg, cheese slice, tomato, muffin top. Season with salt, pepper, and hot sauce to taste.
