Recipe Instructions

PRE-TRIP PREP: Portion pancake mix into zip-lock bags before departure. Freeze turkey sausage links.

ON THE RIVER: Mix pancake mix and water in a bowl until just combined; fold in dried blueberries. Heat a skillet with butter or oil over medium heat. Pour ΒΌ cup batter per pancake; cook until bubbles form on surface (2–3 min), flip and cook 1–2 more minutes. Meanwhile, heat thawed sausage links in a separate pan. Serve pancakes with maple syrup and sausage.
