Recipe Instructions

PRE-TRIP PREP: Freeze bacon in portioned zip-lock bags before departure.

ON THE RIVER: In a shallow bowl, whisk together eggs, milk, vanilla, and cinnamon. Heat butter in a large skillet over medium heat. Dip bread slices in egg mixture, letting each side soak 15 seconds. Cook 2–3 minutes per side until golden brown. Reheat bacon in a separate pan or wrap in foil over stove. Serve with maple syrup.
