Mix together all rice ingredients except soy sauce and vinegar (if using) in a fry pan. Cover and cook until rice is done (20-30 mins for regular rice). Stir in soy sauce and vinegar. Make white sauce; add all other sauce ingredients except cayenne or hot sauce; blend and cook until heated through. Mix sauce into rice or pour over individual bowls. Add hot sauce to taste.
Variations: Add 1 can of chicken to the rice as it cooks, or add dried banana and coconut.
